Hello Monday!! Why is it that Saturday and Sunday are the fastest days of the week? We had a great weekend though! Friday Rob’s band Six String Panic opened for another band, so they were able to get a little play time in.
Saturday was a pretty chilled day, we kicked back most of the day. We did go out to check out or friends new home they are renting and stopped for a cocktail on the way home and then got some food to go and went home and watched a movie. The movie we watched was Locke and it was pretty good, worth watching and the kicker is, there is physically only one actor in the movie.
Sunday we relaxed during the day and then headed to my girlfriends to watch the Cards/Bengals game. My girlfriend Wendy is a HUGE Cardinal’s Fan and my hubby is a HUGE Bengal’s fan.. and of course the Bengal’s won, lol.. I made a new recipe and it was pretty good…
Jalapeno Bites
One 8-ounce package cream cheese, softened
8 ounces Parmesan, grated (about 2 cups)
4 tablespoons seeded and chopped jalapeno peppers
1 large egg, beaten
3 cups dry plain breadcrumbs
Directions
Preheat the oven to 350 degrees F.
Mix the cream cheese, Parmesan, jalapenos and egg to form a paste. Shape into balls using about 1/2 tablespoon of paste for each. Roll the balls in the breadcrumbs. Place on an un-greased baking sheet and bake for 10 to 15 minutes, until golden brown. Serve warm.
I made a new dip that I liked too, Cilantro Jalapeno Dip if you would like I can post it.. Oh, perhaps I can get Rob to add a Recipe section to the blog and I can post them that way…
